5 Non-Traditional Ways to Try Pumpkin

Do you have pumpkins left over from Halloween? Or maybe you want to try pumpkin but don't know where to start. This article is for anyone interested in eating pumpkin.

The most tradition way to eat pumpkin is a pumpkin pie. This article isn't about the traditional way.

Is a pumpkin a fruit or a vegetable? Well that depends on how you look at them. On one hand, pumpkins have seeds. On the other hand, pumpkins are not sweet. The conclusion is a pumpkin is both a fruit and a vegetable.

1. Toasted Pumpkin Seeds

I'll start with a popular way to eat pumpkin... seeds that is. To gather the seeds, cut a hole from the top big enough for your hands. Then, reach in and start digging out the seeds. Note that it's very messy! After you have the mess with the seeds, rinse them off well, until you have the seeds cleaned.

Add salt water to a sauce pan, bring to a boil and then add the seeds. Once the seeds are added, they may take around 10 minutes to cook through.

After you have boiled the seeds, spread them on a baking pan or cookie sheet, lightly spread olive oil over them and bake at 400 degrees for 20 minutes or until the seeds are lightly toasted brown.

2. Pumpkin Pie Smoothie

Care for a drink? In a blender, combine 1/2 cup ice, 1/2 cup vanilla nonfat yogurt, 1 tsp. honey, 1/4 tsp. pumpkin pie spice and 1/4 cup pumpkin puree (see below).

3. Homemade Pumpkin Puree

Find a pumpkin 8 to 12 inches across for best results. Scoop out seeds (as described for Toasted Pumpkin Seeds above). Cut the seeds into quarters and roast at 350 degrees for 75 to 90 minutes. Cool, then add the seeds and flesh into a food processor or blender, then puree.

4. Pumpkin Pasta Sauce

This one might seem a little strange. Who wants pumpkin over their pasta? Why not!?

Sauté several cloves of garlic and diced onion (about half an onion). Add 1 1/2 to 2 cups pumpkin puree (see above) and stir to combine. Add vegetable stock, if needed, to thin the sauce.

Add minced fresh sage or rosemary to finish off the sauce. Serve over hot pasta.

5. Homemade Pumpkin Ice Cream

Add 1 cup canned or pumpkin puree and 1 tsp. pumpkin pie spice to your vanilla ice cream recipe. Then, add to your ice cream maker according to it's instructions.
